Washed How does coffee move from a red cherry on a coffee tree to a green seed entering a roaster? Processing. Most coffees are either wet processed or dry processed. With washed (wet processed) coffees, cherries are pulped to remove the cherry from the beans. The beans are then bathed in water to remove all the remaining cherry mucilage. Then the beans are washed to clean them fully. Lastly, they are dried on cement patios.
