This is a Two-Pack from the Mormora Farm in Guji Region of Ethiopia. One package is washed process and the other is natural process. Same farm, same tree varietals. This is a great way to introduce yourself to the differences of washed versus natural processed coffees.

Ordering a half pound gives you a quarter pound of each process method. Ordering a pound will give you you a half pound of each.

Washed
Mormora is a beautiful cup, refreshing in a way. Earl Grey with bergamot oil, rose water florals, citrus oil, and acidity that's like sweet tea with lemon spritz. There's a bergamot citrus floral note deep in this Shakiso coffee that builds in strength as you move from dry fragrance, to wet aromatics, and finally at full steam in the brewed coffee. The fragrance has muted honey and graham smells, a sweet orange accent, and subtle florals too. The wet aroma is honey sweet as well, like wild honey florals, so aromatically potent, and a citrus blossom floral note released on the break. Refreshing is an odd descriptor for coffee, but was put to paper when assessing this Mormora coffee! Mormora is a light bodied coffee, and in our experience will shine brightest with light to middle roast development.

Natural
So complex on it's own, and a fantastic blend component, this Natural shows a wide range of fruit flavors: melon, cooked rhubarb, strawberry milk, berry lambic, and more. Being a dry process coffee, you can bet the cup is on the wild side. And it is, conjuring a multitude of fruit descriptors and more, but with refined acidity, especially considering this particular process method. You'll notice a berry wine aroma, with more than a hint of jasmine flower in the cup, and flavor of mixed berry compote (a reduction of berries, spices, and usually orange juice). The cup is fairly clean for a natural process coffee, far and away superior to your average Grade 3. Acidity has a lemony effect, providing a backbone to the fruit tones without overpowering. Melon, cooked rhubarb, strawberry milk, and chocolate malt balls come to mind as I move through the cup, a complexity that pervades all the way through to the last finishing hints.
