Natural How does coffee move from a red cherry on a coffee tree to a green seed entering a roaster? Processing. Most coffees are either wet processed or dry processed. Natural (or dry processing) involves laying the coffee cherries out on dry beds in the sun to shrivel the cherries like raisins with the beans inside. These raisined beans are then raked to remove the dried hull.
